Our wines are sourced and produced from grapes harvested from single low-yield vineyards that are family run which specialize in unique varietals from Sonoma and Mendocino counties. The climate and landscape of these regions provide a balance of character and quality which maximizes the intensity of the fruit promoting a finely structured well rounded wine.

We produce less than 500 cases per year which allows us to dedicate a handcrafted approach to every detail of the wine making process.  During the harvest our grapes are hand picked/sorted when the fruit is perfectly ripe and we strive for Native Fermentation using a cold soak then barrel aged process that intensifies the flavor and color of the wine.

Wait Cellars was founded in 2005 by Bob Wait, a local to San Francisco’s Lower Haight neighborhood and owner of The Page on Divisadero Street in San Francisco. Dumbfounded by the physical beauty of California’s north coast upon arrival from Michigan in 1988, Wait Cellars in some ways represents a way to connect with and consummate an understanding of this unique and gorgeous land.

Our carefully selected fruit, and our relationships with our growers, are at the heart of our wines. We work with small growers and value long-term relationships. We are particularly drawn to the many expressions of Sonoma County, from the cool, windy, fog-bound areas of the Petaluma Gap, Sebastopol Hills, Green Valley, and Sonoma Coast AVAs, to the relatively warmer temperatures and rich soils of the Russian River valley south west of Healdsburg.

Fallon Place is a project by winemaker and proprietor Cory Michal dedicated to the small scale creation of single vineyard designate wines from unique sustainably and organically farmed vineyards in Sonoma County. Cory has studied viticulture and enology at UC Davis and Université de Bourgogne, in addition to working for top wineries in Northern California. The wines are produced naturally utilizing the highest quality fruit, minimal intervention winemaking techniques and native fermentations. The wines are meant to reflect the purity of their vineyard terroir for the vintage, offering a snapshot of time and place. The wines are produced first and foremost for our wine allocation club members and can also be found in fine restaurants and wine shops across California.
